Syrups Molasses & Honey

Maple syrup - all sizes of Camp and L.B Maple treat syrups including maple syrup goodies such as maple cookies, and maple sugar candies.

Malt syrup is also available at Galloway's – it is a sweet liquid made from malted barley. First raw barley is soaked in drums of cold water for 2-3 days and allowed to sprout in temperature and humidity controlled chambers. The sprouted grain is then dried at 120-180 degrees and the rootlets are removed - this is malted barley. Finally, the malted barley is ground and is briefly dipped in an acid solution, then it is heated with water to form the mildly sweet, concentrated liquid we know as malt syrup.

Molasses is a by-product of the sugar refining process and varies in color and sweetness. Molasses contains minerals and trace elements such as iron, calcium, zinc, copper and chromium. It is used chiefly for its flavor and colr for baked goods. In addition, molasses can be considered as a leavening agent due to its acidity. It reacts with baking soda to release gas to raise cookie dough.

There are several grades of molasses. Barbados which is a light molasses is what remains after the first extraction of sugar crystals, and is quite sweet. Blackstrap molasses is the liquid left after the third extraction. It is very dark, bitter tasting and aromatic.

Honey - is the direct product of bee's hard labor. Bees go to flowering plants which produce nectar, a mixture of sucrose and water. Bees drink this fluid and store it in the hive. A honey bee must visit about 5000 flowers to create just one quarter tablespoon honey. Honey is extracted from the comb through centrifugation. It is heated gently to dissolve any crystals and poured into a mixing tank where it is blended to ensure a consistent quality. The honey is then strained and filtered to remove all bubbles and impurities that might be present and also delay crystallization. At this point the honey is ready to be packaged in its final container.

Honey contains about 17% water, 82% carbohydrates of which 30-35% glucose and 35-40% fructose, as compared to other sweeteners, which are pure carbohydrate products. As a result honey has fewer calories compared to other sweeteners - only 304 kcal/100g for honey versus 400kcal/100g for sugar. Honey is also a source of B vitamins as well as minerals such as magnesium, zinc, phosphorous, and copper.
