Roasted Sweet Potato and Brussel Sprouts Salad

2 large sweet potatoes, cubed

Instructions:
Preheat the oven to 400°F (200°C).
Toss the sweet potatoes and Brussels sprouts with olive oil, salt, and pepper.
Roast on a baking sheet for 25-30 minutes, flipping halfway through, until tender and caramelized.
